A mild, fragrant cooking base. Traditionally used to create Cambodia’s most famous dish, fish ‘Amok’. Rather delicious in a wide range of recipes that include soufflés and risotto. Made by chefs in small batches, with fresh ingredients from farming cooperatives in Kampong Chhnang.
